Aging Innovation at the VinAgora Wine Competition – a new approach to winemaking

Winemakers, developers, and wine enthusiasts sat around the same table, searching for an answer to a shared challenge. How can the aging process be guided in a way that allows the structure of the wine to develop while preserving its fresh, fruity character? This question led to the creation of EvoCask.

Since then, the issue has become even more relevant. Consumer trends are increasingly shifting toward fresher, fruit-driven styles, while winemakers still aim to achieve the complexity and balance that come with aging. But is it possible to control the aging process with the same precision as a technological parameter?

One of the key elements of aging is micro-oxygenation, the process by which very small amounts of oxygen enter the wine. This helps soften tannins and build structure. EvoCask makes this process predictable by allowing oxygen to permeate the wine gently and evenly through a specially developed composite material. “As a winemaker, I kept asking myself why so many compromises are necessary when aging wine,” says László Fehérváry-Gál, one of the creators of EvoCask. “The solution ultimately emerged from a personal need and professional dialogue.”

One of the key advantages of the technology is that it can be used without imparting oak character, giving winemakers full control over the stylistic direction of the wine. This is particularly important when the goal is to preserve fruitiness while enhancing complexity.The reliability of the system has also been validated internationally. Its oxygen transmission properties were tested by the Fraunhofer Institute, one of Europe’s most respected applied research organizations. EvoCask is entirely designed and manufactured in Hungary, complies with European food industry regulations, and is built for long-term use, offering a lifespan of over 20 years and a 15-year warranty. 

The technology will also be featured at the 2026 VinAgora International Wine Competition, where the “Aging Innovation Award” will be introduced. The winner will receive an EvoCask Model 11 aging vessel. The purpose of this special award is to highlight that aging is not only a matter of tradition, but an evolving technological field, and that the future of winemaking often lies in precisely controllable solutions like this one.
